Almond Butter Noodles

These almond butter noodles are creamy and flavorful. They’re so quick and easy to make. These noodles are perfect when you need a really fast and simple dinner or lunch.

What to serve with them

For a complete meal, serve these noodles with steamed or sautéed vegetables and a protein source such as tofu (this easy tofu marinade is my favorite).

Ingredients and substitutions

Be sure to use smooth almond butter with no added sugar or salt when making these noodles.

You can use any type of noodles you like in this dish. For a boost of fiber and nutrients, try using whole grain noodles, or noodles made from buckwheat flour (aka soba noodles). Noodles made from legumes such as chickpeas or black beans are another nutritious option.

To keep this dish really quick and easy, I opted to use garlic powder and onion powder instead of chopped garlic and onion. You can substitute chopped garlic if you prefer, in which case increase the amount to one teaspoon.

I like to garnish these noodles with chopped green onions and a sprinkle of sesame seeds. You can omit those toppings if you prefer.

How to make them

Begin to cook the noodles according to the instructions on the package. While the noodles are cooking, add the almond butter, water, soy sauce, garlic powder, onion powder, and (optional) chili flakes to a bowl.

When the noodles are finished cooking, drain them, then toss with the almond butter sauce.
